Destination Huatulco

Huatulco, Oaxaca, Mexico  is an internationally recognized, award-winning destination being developed with a conscience. In this context we offer you the opportunity for our Intensive Language Program.

As we create meaningful learning experiences, we will visit eco-friendly sites from the beach to the mountains and meet members of the local community involved in creating and maintaining sustainable environmental practices.

(This experience is designed for students who enjoyed their first immersion so much that they requested we put together another week of different activities around which more language practice will evolve. Itinerary

Day 1 – Saturday, September 30th

  • Arrive Huatulco International Airport.
  • Transportation to hotel Posada Santa Clara.  http://posadasantaclara.com/
    • small family run “posada” and restaurant
    • private bathroom, cable TV, air-conditioning, Wi-Fi in lobby and restaurant
    • located 10-minute walking distance from the classroom, beach, and town
  • 7:30 Welcome reception dinner at Posada Santa Clara. Evening orientation, get acquainted meeting

Day 2 – Sunday, Oct. 1st

  • Breakfast at 8:00
  • 9:00 Leave for Barra de la Cruz.
  • Tour of communal beach village
  • Lunch at beach restaurant with round table discussion in Spanish refining our understanding of Huatulco and surrounding areas, optional hike to great vistas and/or swim
  • 7:30 pm Dinner
  • Walking tour of Santa Cruz: Visit chapel and learn history of the port area and how it got its name. Stop at Café Huatulco for coffee, dessert and music outdoors.

Day 3 – Monday, Oct. 2nd

  • Breakfast at 7:30
  • Intensive Language Study 8:30-9:30
  • Transportation to organic coffee plantation
  • Lunch made from local ingredients
    • Discussion in Spanish expanding vocabulary and communicating in the context of our day’s experience.
  • Intensive Language Study 6-7
  • 7:30pm Dinner at Santa Clara
  • Walk to La Crucecita, optional demonstration of Oaxacan cotton bedspreads and table cloths woven on a traditional loom.

Day 4 – Tuesday, Oct. 3rd

  • Breakfast at 7:30

    8:30-10:30 Intensive Language Study, visit from community member for listening practice and question and answer period.
  • Culinary tour – off the tourist trail, sample traditional regional foods at local taquerías, comedores and restaurants
  • 7:00 Dinner paired with Mexcal tasting

Day 5 – Wednesday, Oct. 4th

  • Breakfast at 7:30
  • 8:30 Trip to mountain waterfalls
  • Hike along the river, swim
  • Lunch in the shade of the palapa
  • Intensive Language Study 5:00-7:00
  • 7:30 Dinner at Santa Clara.
  • Movie night in La Crucecita

Day 6 – Thursday, Oct. 5th

  • Breakfast at 7:30
  • 8:30-10:30 Intensive Language Study
  • Visit to Copalita river and iguanario (Iguana hatchery)
  • Rafting depending on the water level after the rainy season.
  • Lunch in Copalita
  • 7:30pm Dinner on your own, optional night out listening to local music talent

Day 7 – Friday, Oct. 6th

  • Breakfast at 7:30
  • Intensive Language Study 8:30-10:30
  • Visit to Traditional Temazcal (Indigenous stream bath with healing herbs)
  • Afternoon beach time at Chahue or Santa Cruz or go into town for shopping and exploring
  • Sunset sailboat excursion
  • Closing fiesta dinner 8-10pm

Day 8 – Saturday, Oct. 7th

  • Breakfast at 8:00am
  • Final practice in Spanish as we say our goodbyes and thank you to our hosts at the Santa Clara Posada
  • Transportation to Huatulco International Airport with plenty of time to make your connections in Mexico City and back home according to your individual flights.

  • 9:00 Boat tour of the Bays of Huatulco.
  • Swimming, snorkeling
  • Lunch at beach restaurant with hour round table discussion in Spanish in language groups refining our understanding of Huatulco
  • 7:30 pm Dinner in La Crucecita
  • Walking tour of La Crucecita: Visit Bioamigables store for talk about sustainable initiatives in Huatulco, Visit fruit and vegetable market, grocery store, silver stores, market for souvenirs, shopping, time to explore and shop in town.

Day 3 – Monday, Oct. 9th

  • Breakfast at 7:30
  • Intensive Language Study 8:30-9:30
  • Transportation to Hagia Sofia Agro-ecological Development in the foothills of the Sierra Madre del Sur  .    http://www.hagiasofia.mx/ingles/
  • Local organic fruit and juice tasting
  • Walk and observation of plants, flowers and birds
  • Visit to and explanation of orchard, apiary, and composting
  • Cool off dip in waterfall and time to relax.
  • Lunch made from local organic ingredients prepared on wood burning stove
    • Discussion in Spanish expanding vocabulary and communicating in the context of our day’s experience.
  • Spanish class 6-7 presentation in Spanish and discussion in preparation for evening demonstration by local artisans.
  • 7:30pm Dinner at Santa Clara
  • Optional  visit to artisan shop in La Crucecita for demonstration of handmade traditional folk art. See how artisans card and dye wool then demonstrate weaving colorful rugs on a loom.  Watch and listen as artists explain what are known as “alebrijes” – colorful Oaxacan sculptures

Day 4 – Tuesday, Oct. 10th

  • Breakfast at 7:30-8:30

  • 9:00 Tour ruins, visit museum, hike to overlook of Pacific coastline.
  • 2:00 Lunch Comida Corrida at Bossa Nova  (Café afterwards)
  • Descanso
  • 4:30-6:30 Intensive Language Study
  • 7:00 Dinner in La Crucecita – try traditional Tlayudas or Pozole
  • Optional demonstrations – Museo de Oaxaca: traditional Oaxacan cotton bedspreads and table cloths woven on a traditional loom.  Mezcal and chocolate tasting.

Day 5 – Wednesday, Oct. 11th

  • Breakfast at 7:30
  • Intensive Language Study 8:30-9:00  Presentation of CONAFE system
  • Transportation to El Derramadero school
  • Visit to beach in Bajos de Coyula – Playa Vieja
  • Discussion in Spanish of school experience, see lagoon, beach, enjoy the sun, go for a swim
  • 2:00 Lunch on the beach – catch of the day.
  • Spanish class 5:30-7:00 Presentation in Spanish on organic shade grown coffee produced in the region.
  • 7:30 Dinner at Santa Clara.  Walking tour of Santa Cruz. Coffee and music at Café Huatulco.

Day 6 – Thursday, Oct. 12th

  • Breakfast at 7:30
  • We can either do this or we can substitute the day a Barra de a Cruz I mentioned in the email.
  • 8:30 Transportation to “Las Cascadas Mágicas” (Magic Waterfalls)
  • The trip includes an explanation of the customs of the mountains we pass through on our way, a coffee tasting, and optional mud bath, a swim by the 30 meter high waterfalls and a traditional lunch with local ingredients served on site. We’ll stop at store along the way to see traditional herbal medicines used for centuries by indigenous people of the region.
  • Spanish language practice as we go – this hour and a half drive will allow for plenty of practice in language groups as we observe our surroundings and reflect on our experiences.
  • Intensive Language Study depending on time of return.
  • 7:30pm Dinner on your own, choice of restaurants

Day 7 – Friday, Oct. 13th

  • Breakfast at 7:30
  • Intensive Language Study 8:30-11:30
  • 12:00 Cooking class and Lunch – We’ve seen Huatulco’s mountains and beaches and learned about its history.  But no cultural study is complete without learning about the preparation and tasting the ingredients of foods unique to this region of Oaxaca. Alfredo will share the rich history behind each traditional element of the meal you will prepare and taste.
  • Afternoon beachtime at Chahue or Santa Cruz or go into town for, shopping, and exploring
  • Closing fiesta dinner 8-10pm

Day 8 – Saturday, Oct. 14th

  • Breakfast at 8:00am
  • Final practice in Spanish as we say our goodbyes and thank you to our hosts at the Santa Clara Posada
  • Transportation to Huatulco International Airport with plenty of time to make your connections in Mexico City and back home according to your individual flights
